Ingredients :
- 4 large sweet potatoes (or 3 cups)
- 1/2 cup butter
- 1/3 cup milk
- 1/2 cup sugar
- 1 teaspoon vanilla
- 2 eggs (beaten)
- 1/3 cup melted butter
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup chopped pecans
Method :
- Heat water until boiling, then add sweet potatoes.
- Cover pot and cook for 10-12 minutes or until just tender on the outside.
- Mash the sweet potatoes with the butter and milk.
- Mix in the remaining ingredients
- Put in a greased 13 x 9 pan.
- Mix together the last 4 ingredients for the topping (butter, brown sugar, flour, pecans).
- Sprinkle the topping on the sweet potatoes.
- Bake at 350°F for 25 minutes.
