Ingredients :
- 2 medium eggplants, cut into round slices
- 1 tbsp chilli powder
- 1 tbsp garlic powder
- 1/4 tbsp ginger powder
- 1/2 tbsp garam masala
- pinch tumeric powder
- 1/2 tbsp dried mango powder or chat masala ( optional)
- salt
- oil
- rice flour
Method :
- Mix eggplants with salt and let it soak for 30 mins. It removes bitterness. Then wash the eggplant wit water and dry .
- Mix chilli powder, garam masala, garlic powder , ginger powder, chat masala or dried mango powder and mix well and coat the eggplants with it and let it marinate for 30mins
- Coat the eggplant slices with rice flour or corn flour and dust off the excess. Shallow fry the slices on pan
- After cooked, transfer them on absorbent paper to remove excess oil
- Serve with rice
