Ingredients :
- 1 large Brinjal (eggplant)
- 2 medium Tomatoes
- 1 medium Chilli
- 3 tbsp Coriander leaves (finely chopped)
- 3 tsp salt
- 1/4 tsp turmeric powder
Method :
- Place the tomatoes and brinjal on a gas stove and turn flame to med-high. Let them cook/roast for about 5 minutes. Keep turning them once in a while to prevent burning
- Once ensured that they are cooked, keep them aside. After they cool, peel of the scalded skin.
- Using hands and 2 forks pluck the tomatoes and brinjal and shred them. Keep it a uniform and bit coarse for good texture
- Add the coriander, chopped chili and turmeric
- OPTIONAL. Add some tadka (indian seasoning made in hot oil with dried pulses and mustard)
- Mix well and serve. Can be eaten with rice or roti.
