Ingredients :
- 1 1/2 onions (sliced into rings)
- 1 large free-range egg
- 60 grams (2 ounces) plain flour
- 1/2 tsp ground coriander
- 1/2 tsp cumin seeds
- 3 tbsp vegetable oil, plus extra if required
Method :
- Beat the eggs in a bowl, add the onion rings, and mix well
- Mix in the flour, ground coriander, and cumin seeds. Ensure you have a nice thick, but smooth batter, before cooking
- Heat the oil to a medium heat in a deep-sided frying pan or wok. When hot add a generous dollop of the bhaji mixture and fry for 30-45 seconds, until golden-brown
- Turn, and fry for a further 30 seconds. Keep turning and frying until crisp and golden-brown all over. Remove from pan, and drain on kitchen paper
- Repeat with the remaining bhaji mixture. Add extra oil to the pan if it runs low. Bring the pan back up to heat before adding any more mixture. Drain on kitchen paper, then serve...
