Ingredients :
- 1 lb chicken breasts (4-4oz breasts or chicken tenders)
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tsp olive oil
- 1 cup chicken broth, fat-free
- 1/2 lb seedless green grapes, halved
- 2 tsp fresh tarragon, chopped
Method :
- Season chicken with salt and pepper. Heat oil in large skillet over medium heat, cook chicken until browned.
- Add broth and bring to boil. Reduce heat, cover and simmer until chicken is cooked through.
- Add grapes and tarragon, cover and simmer another 2 minutes, until grapes are slightly softened.
