
Ingredients :
- 1-2 butternut squash
- 2 stalks fresh chopped green onions
- 2 tablespoons dried oregano
- to taste pepper
- to taste salt
- Olive oil (for drizzle)
- 1/2 cup any high heat cooking oil
- Fresh chives
- Fresh thyme
Method :
- Lightly brush the squash with a high heat oil prior to placing on bbq. You do not have to brush it again in any other steps.
- Place the squash on bbq.
- Periodically turn the squash until it feels tender from the outside.
- Cut open squash. Sprinkle thyme, oregano and green onions.
- Depending on the size of the seeds, you may decide to just leave them in as they are edible and adds a nutty flavor. If not, gently remove them and leave the connecting tissues intact.
- Drizzle with olive oil. Add a few cracks of fresh pepper and salt to taste.
- The best part? Slice into sharable sizes and plate. I actually had a nice dish plated but my family couldnt wait...and I don"t blame them!
