Recipe Shortcrust pastry cases (savoury)

Ingredients :

  • 300 g plain white flour
  • pinch salt
  • 150 g cold butter (cut into small pieces)
  • 60 ml water

Method :
  1. Sift the flour and salt into a mixing bowl and rub in the butter to get a sandy texture. Add the water, mixing with a round-bladed knife and then using the hands to form a soft dough. (Add a little more water or flour to correct the dough if needed.)
  2. Divide the pastry in two. Roll out one half, taking care not to over-work it, to a round somewhat larger than the flan tin. After greasing the in, carefully lower the pastry round into the tin and arrange it so the tin is fully lined. There is no need to trim the pastry at this stage. Repeat with the other half of the pastry.
  3. Cover the pastry cases in in foil, weighted down with baking beans. Chill for 30 minutes in the fridge. Meanwhile, pre-heat the oven to 200 degrees.
  4. Bake the covered pastry cases for 15 minutes, then remove the foil and baking beans and bake for a further 5 minutes.
  5. The pastry cases are now ready to be filled with your chosen filling and baked further as required.
