Recipe Garlicky parsley red potatoes

Resep Garlicky parsley red potatoes

Ingredients :

  • 4 medium Red or white waxy potatoes, cleaned and peeled ( if you want them peeled)
  • 1 tbsp Diced garlic
  • 1/2 tbsp salt ( I used regular table salt)
  • water
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp coarse grain salt
  • 1/2 tsp ground black pepper
  • 1/3 cup chopped parsley

Method :
  1. In a medium saucepan, place garlic, 1tbls salt, potatoes, and enough cool water to cover.
  2. Bring to a boil. Boil potatoes till they are just folk tender. Preheat oven to 450°F
  3. Remove potatoes from water. do not discard remaining water, but do remove from heat
  4. Place potatoes on a baking sheet tossed with 1-2 tablespoon olive oil. sprinkle with coarse salt and pepper
  5. Place in hot oven to toast and brown a bit. Approximately 20 to 25 minutes depending on your oven.
  6. Remove from oven and sprinkle with parsley. Serve
  7. I saved my water from the potatoes to to steam green beans and sweet peppers
