Ingredients :
- pancake
- 1 cup whole wheat flour
- 1 tbsp Vegan butter
- 1 tsp vanilla extract
- 1/4 tsp stevia
- 1 tsp vegetable oil
- 1 tbsp mashed potatoes
- 1 each Apple - peeled, cored and chopped finely
- 1 tbsp flax meal
- 2 tsp baking powder
- 1 cup soy milk - add little at a time
- topping
- 2 tbsp low fat vanilla yogurt
- 1 pints berries or any type of fruit
Method :
- Mix all pancake ingredients together in bowl and add soymilk gradually and stir to pancake consistency.
- In frying pan, medium high heat, add a little oil, fry mini size pancakes, remove and places on paper towel to remove some oil.
- Stack pancakes on small plate, topped with yogurt and berries.
