Ingredients :
- 2.5 pounds pork cut in cubes
- 1/4 cup ap flour
- 2.5 tsp salt
- 1.5 tsp pepper
- 3 tbsp evoo
- 2 leeks
- 1 cup shallots
- 4 clove garlic
- 1 cup white wine
- 5 medium carrots
- 4 medium potatoes
- 2 cups chicken stock
- 1 (14.5 oz) can tomatoes
- 2 tbsp balsamic vinegar
- 2 bay leaves
- 1 tsp basil
- 1 tsp oregano
- 1 tsp thyme
Method :
- Toss pork in flour with salt and pepper mixed in.
- Brown pork in evoo in batches. Don"t overcrowd.
- Add leeks, shallot and garlic to pot. Saute 5 minutes.
- Deglaze with white wine.
- Add remaining items to pan and bring to a boil then simmer 5 minutes.
- Add pork and simmer 40-50 minutes.
