Ingredients :
- 1/2 a very fresh cucumber
- sea salt flakes
- best butter
- 4 slices good quality white bread
- white pepper
Method :
- Thinly peel the cucumber.
- Slice the cucumber thinly, place in a colander or sieve and sprinkle with salt.
- Thickly butter the bread, I started off with frozen slices so that I could easily spread it with cold butter, and get it good and thick. By the time I"d finished the sandwiches the bread had defrosted.
- Lay the salted cucumber on kitchen paper and pat gently to remove excess water.
- Arrange the cucumber on the bread and sprinkle with a little extra salt for crunch, together with a light sprinkling of white pepper, use black if you don"t have any but white is traditional.
- You"re meant to cut the crusts off, and I did this for the photograph, but otherwise I"d leave them on. Serve straight away.
