Recipe Chickpea and Spinach Curry

Resep Chickpea and Spinach Curry

Ingredients :

  • 1 yellow onion
  • 1 big piece of fresh ginger (to taste)
  • 2 garlic cloves
  • 1 can chickpeas (400g), rinsed and drained
  • 1 can chopped tomatoes
  • 350 g frozen chopped spinach
  • 2 tablespoons curry powder
  • (to taste) black pepper, salt
  • 1 teaspoon sugar

Method :
  1. Dice the onion, chop the ginger finely and crush the garlic cloves. Heat a tablespoon of oil in a skillet over medium high heat
  2. Add onion to the skillet. Fry until translucent, then add ginger. As soon as it gets fragrant, add garlic
  3. Next, add cooked chickpeas, canned tomatoes and spinach. Cover with a lid and bring to a boil
  4. Add seasoning and simmer for 10-15 minutes stirring occasionally. Serve over rice. Enjoy :)
