Ingredients :
- 2 T onion (finely chopped)
- 2 lg cloves garlic (minced)
- 2 T fresh parsley (chopped)
- 1 T fresh mint (chopped)
- 1 T spicy brown mustard
- 1 t prepared horseradish
- 1 t Worcestershire sauce
- 1 t kosher salt
- 1/2 t ground cumin
- 1/2 t freshly ground pepper
- 1 egg (lightly beaten)
- 1 lb ground lamb
- 4 T crumbled blue cheese
- 1 T butter
- 1 T canola oil
- 4 brioche hamburger buns (halved)
- 4 leaves lettuce
- 1 med red onion (sliced)
- 1 large beefsteak tomato (sliced 1/4-1/2-in thick)
Method :
- In med bowl, mix together onion, garlic, parsley, mint, mustard, horseradish, Worcestershire, salt, cumin, pepper, and egg. Add lamb and mix well with hands.
- Shape lamb mixture into 4 patties. Press 1 T blue cheese into center of each patty. Roll into balls, then flatten into 3x1-in patties. Transfer to plate and refrigerate uncovered 30 min - 2 hrs.
- Heat large cast-iron skillet over med heat, then add butter and canola oil. Place cold pattied in skillet and cook until browned on both sides and cooked thru. 4-6 min per side for med-well.
- Place burgers on buns and layer with lettuce, red onions, and tomatoes.
