Ingredients :
- 6 large ripe tomatoes, cut crossways into 1/4" slices
- 1 lb fresh mozzarella, cut into 1 /4" slices
- 6 tbsp extra-virgin olive oil
- 3 tbsp balsamic vinegar
- to taste Salt and freshly ground black pepper
- 8-12 fresh basil leaves
Method :
- Arrange the slices of tomato and cheese on a large platter, alternating them in a decorative pattern.
- In a bowl, whisk together the olive oil, vinegar, salt and pepper. Drizzle the dressing over the tomato and mozzarella slices. Cut the fresh basil leaves into thin strips and sprinkle then over the dish. Serve immediately.
