Ingredients :
- 4-6 red skin potatoes
- Olive oil
- 4-6 sausages, any kind
- 1 green or red pepper
- 1 onion
- 1 cup chopped mushroom
- 3 eggs
Method :
- Cut and quarter potatoes. Place in LG Skillet on low flame with olive oil and seasoning. Let cook for 20 min and cover. Stir occasionally
- In another pan place sausage cut in 1/3 pieces. Let brown
- Once browned, add chopped mushroom, pepper and onion
- Let cook till tender
- Once done place sausage mixture in with potatoes. Make 3 divots for eggs and cook to desired firmness.
