
Ingredients :
- 5-6 yellow onions
- 4 medium sweet bell peppers
- 5-6 jalapeno peppers
- 4 Tablespoons beef base
- 4 oz. minced garlic
- 6 Tablespoons Worcestershire sauce
- 2 Tablespoons cumin
- 2 Tablespoons cayenne
- 2 Tablespoons cajun seasoning
- 2 Tablespoons Basil
- 2 Tablespoons Thyme
- 2 Tablespoons Celery salt
- 2 Tablespoons granulated garlic
- 2 Tablespoons onion granules
- 4 Tablespoons roasted garlic pepper
- 4 Tablespoons montreal steak seasoning
- 5 lbs. ground chuck
- 1 #10 can dark kidney beans
- 1 #10 can diced tomatoes
- 1 #10 can crushed tomatoes
- 1 1/2 cups dark chili powder
- 2 Tablespoons Cholula hot sauce
- to taste black pepper
- shredded jack cheese
Method :
- Dice onions, peppers and jalapenos and mix with all spices,beef base and Worcestershire. Add minced garlic and sweat in large.pot.for 20-25 minutes. Stirring occasionally to avoid scorching.
- Brown and drain ground beef. I like to season as its cooking with Montreal steak seasoning and roasted garlic pepper.
- Add drained ground beef to pot with kidney beans, crushed and diced tomatoes. Mix thoroughly.
- Add cholula and black pepper to taste and let simmer on low for hours.
- Serve topped with shredded jack cheese and enjoy!
