
Ingredients :
- 130 g ground almonds
- 240 g icing sugar
- 125 g egg whites
- 75 g caster sugar
Method :
- Blend together the icing sugar and almonds then pass
- Whisk the egg whites until light and slowly add the sugar and continue whisking to a meringue
- Fold in the sugar and almonds mix and place in a piping bag
- Pipe out small discs and leave them out to dry a little. Then bake on about 130°C until risen and firm to touch
