Ingredients :
- CRUST
- 2 cups flour
- 1 tsp salt
- 8 tbsp cold butter
- 1 egg,beaten
- 1/4 cup cold water
- 2 tbsp sesame seeds
- FILLING
- 1 tbsp butter
- 1 small onion, diced
- 1/2 cup sundried tomatoes
- 1 tsp dill
- 12 oz spinach
- 1/2 tsp thyme
- salt and pepper
- 1 cup havarti cheese
- 3/4 cup cheddar cheese
- 1/2 cup gruyere shredded
- 6 eggs
- 2 cups greek yogurt
- 1 cup milk
- 1/8 tsp nutmeg
- 4 oz prosciutto
Method :
- Mix flour, sesame seeds,and salt. Mix in cold butter.
- Whisk eggs and water together and pour into flour
- Mix to form a moist shaggy dough and roll it out
- Sprinkle a greased springform pan with sesame seeds and put dough in
- Preheat oven to 350°F
- Bake crust for 10-15 min
- Reduce oven temp to 325°F
- Heat butter in a skillet over medium add onion and cook until caramelized about 10 min
- Stir in spinach and sundried tomatoes, cook until spinach is wilted
- Add thyme, dill, salt and pepper. Make sure all moisture is removed from spinach and remove from heat
- Cool 5 to 10 min and stir in cheese
- Spoon spinach into crust
- Blend eggs, yogurt, milk, and nutmeg until smooth season with salt and pepper, and pour over the spinach
- Bake 15 min top with prosciutto. Bake another hour. Allow to rest 20 min before cutting. Top with sesame seeds and salt
