Recipe Deep dish spinach and prosciutto quiche with toasted sesame crust

Ingredients :

  • CRUST
  • 2 cups flour
  • 1 tsp salt
  • 8 tbsp cold butter
  • 1 egg,beaten
  • 1/4 cup cold water
  • 2 tbsp sesame seeds
  • FILLING
  • 1 tbsp butter
  • 1 small onion, diced
  • 1/2 cup sundried tomatoes
  • 1 tsp dill
  • 12 oz spinach
  • 1/2 tsp thyme
  • salt and pepper
  • 1 cup havarti cheese
  • 3/4 cup cheddar cheese
  • 1/2 cup gruyere shredded
  • 6 eggs
  • 2 cups greek yogurt
  • 1 cup milk
  • 1/8 tsp nutmeg
  • 4 oz prosciutto

Method :
  1. Mix flour, sesame seeds,and salt. Mix in cold butter.
  2. Whisk eggs and water together and pour into flour
  3. Mix to form a moist shaggy dough and roll it out
  4. Sprinkle a greased springform pan with sesame seeds and put dough in
  5. Preheat oven to 350°F
  6. Bake crust for 10-15 min
  7. Reduce oven temp to 325°F
  8. Heat butter in a skillet over medium add onion and cook until caramelized about 10 min
  9. Stir in spinach and sundried tomatoes, cook until spinach is wilted
  10. Add thyme, dill, salt and pepper. Make sure all moisture is removed from spinach and remove from heat
  11. Cool 5 to 10 min and stir in cheese
  12. Spoon spinach into crust
  13. Blend eggs, yogurt, milk, and nutmeg until smooth season with salt and pepper, and pour over the spinach
  14. Bake 15 min top with prosciutto. Bake another hour. Allow to rest 20 min before cutting. Top with sesame seeds and salt
