Ingredients :
- 1 whole chicken, rinsed, patted dry and giblets removed
- 3 TBS. butter
- 3 TBS. olive oil
- 1 TBS. Garlic powder
- 2 TBS. rosemary
- To taste salt + pepper
Method :
- Preheat oven to 350°F.
- Remove giblets, rinse chicken in cold water and pat dry with a paper towel.
- Drizzle with olive oil on both sides, apply salt, pepper, garlic powder and Rosemary on both sides.
- Cut up butter into small pieces and place on top of chicken.
- Bake in the oven at 350°, UNCOVERED, until internal temperature of chicken is 180° (Apx. 2 hours, depending on the size). Baste often for crispy skin!!
- Let chicken stand for 10-15 minutes. Carve and enjoy! Serve with roasted potatoes seasoned the same way, as a suggestion.
