Ingredients :
- 1 cup butter
- 1 1/2 cups granulated sugar
- 3 tablespoons milk
- 1 1/2 teaspoon vanilla extract
- 1 1/2 cup flour
- 3/4 cup cocoa powder
- 1 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups ready oats
Method :
- Preheat oven to 350ºF/180°C
- Line baking trays with parchment paper
- In a bowl mix butter, sugar, milk and vanilla. Beat them together well
- Sift in the flour, cocoa, baking soda, baking powder and salt. Mix together to make a slightly sticky paste.
- Add the oats and mix to combine thoroughly - it"s important to use the ready oats (ready brek)
- Make balls (large walnut sized) and place on sheets
- Bake in centre of oven for 10 minutes
- IMPORTANT: Remove from oven and leave to rest on trays for at least 5 minutes - they will be slightly domed as they come out of the oven then will sink and flatten, but most importantly they must harden or they will fall apart upon lifting!
- Transfer to cooling rack
- If making non chocolate, then add another ¼ cup of flour and spices (ginger etc) of your choice
