Ingredients :
- 1/2 pound snap peas
- 2 cups English peas
- 1 shallot minced
- 1/4 cup chives chopped
- 1/3 cup rice vinegar
- 2 tbsp toasted sesame seeds
- 1 clove garlic minced
- 1 tbsp Dijon mustard
- 1 tbsp soy sauce
- 1/4 cup canola oil
- 2 tbsp sesame oil
- 1/4 tsp black pepper
- Optional: tomatoes, avocado, fresh corn
Method :
- Blanch all peas in salted boiling water for 2 min. Plunge into an ice bath, then drain.
- Put peas, shallot, and chives in a mixing bowl. Mix all remaining ingredients in a separate container. Add optional veggies like tomatoes, avocado and fresh corn. Toss together.
