Ingredients :
- 3 cup all-purpose flour
- 1 tbsp baking powder
- 3/4 tsp salt
- 2 1/2 cup milk
- 1 tbsp white vinegar
- 2 eggs
- 1 tbsp vanilla extract
- 4 tbsp melted butter
- 1 Blueberries - optional
Method :
- Preheat oven to 425º. For a softer muffin bake at 400º for 11 minutes.
- Sift together dry ingredients. Set aside. Stir together milk. And vinegar. Let set for 1 minutes. Whisk in eggs and vanilla.
- Combine dry ingredients with wet ingredients. Then stir in melted butter. If batter is to thick stir In a little milk.
- Spray a mini muffin pan generously . Fill 2/3 full. If using blueberries drop 2-3 in each one.
- Bake 8-9 minutes or until golden brown on top. Let sit 1-2 minutes. Then turn them iut to cool. Serve warm with syrup.
