
Ingredients :
- 2 cups cooked egg noodles
- 2 cups cooked spinach noodles
- 4 cloves garlic diced
- 2 tbsp pine nuts
- 4 plum tomatoes diced
- 1 large onion diced
- 1 red pepper seeded and diced
- 1 yellow pepper seeded and diced
- 2 pots Knorr ginger and lemongrass
- 1 Small package fresh spinach
Method :
- In a saucepan add a little olive oil and the spinach. Cook down until soft.
- Add onions, garlic, pine nuts and peppers and cook until onions are translucent, stirring every few minutes.
- Add tomatoes and Knorr pots; stir together and simmer for 15 mins.
- Add noodles and toss in pan until everything is hot.
- Serve with garlic bread and small green salad.
