Ingredients :
- 1 ripe Avocado
- 1/8 th cup coriander
- 1/2 cucumber
- 1 tablespoon Lemon Juice
- 1/4 Red Onion
- 200 g Roma Tomatoes
- Black Pepper
- 1/2 teaspoon salt
- 1 Tablespoon Olive Oil
Method :
- Place chopped veggies and coriander into a bowl
- Drizzle with oil and lemon juice
- Toss gently to combine
- Just before serving add salt and pepper
- Serves 2
