Ingredients :
- 4 tablespoons flour
- 1 teaspoon custard powder/a little vanilla essence
- 1 pinch baking powder
- honey or sugar if you like
- 1 Egg
- 2 table spoons milk
- half a banana
- 1 few small cubes of mango
Method :
- Mix all the dry ingredients together (flour,custard powder, baking powder, fine sugar if u want to)
- Beat the egg and add milk, vanilla essence. You can add honey and skip the sugar if u want to.
- Mash the banana and mix the 3 set of ingredients together. Adjust the consistency as needed by adding more milk/flour such that its medium runny.
- Heat a nonstick pan. You can put a layer of butter if you want to.
- Pour the pancake mixture to get your desired size. I like making cute small ones.
- Cook both sides and repeat to make similar for the rest of the mix.
- Stack them over one another and add the nicely cubed ripe mangos on the top. (You can go crazy with the maple syrup/honey/chocolate sauce/any and every topping of your choice.)
- HEALTHY VERSION: I usually just eyeball all the ingredients and skip the sugar honey butter or even the flour at times. Well in the toppings mango and honey go amazing with banana pancakes.
