Ingredients :
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 orange bell pepper
- 1 white onion
- 1 packet fajita seasoning
- 3-4 large boneless skinless chicken breasts
- 2 cans mild rotel tomatoes
- 2 tbsp honey
- 2 limes
- tortillas
- toppings (cheese, sour cream, salsa, etc...)
Method :
- Slice peppers and onions into strips.
- In crock pot, layer: half of the peppers, half of the onions, and 1 can of tomatoes
- Place chicken breasts over the layers.
- Coat chicken with half of the seasoning packet. Flip breasts and coat with the remaining seasoning.
- Layer remaining can of tomatoes, onions, and bell peppers.
- Remove and shred chicken.
- Juice limes into a small dish. Add honey and stir until well mixed.
- Add lime/honey mix to the crockpot and stir.
- Return chicken to the crock-pot.
- Cover and cook for another 15-20 min. Serve over tortillas with your choice of toppings.
