Ingredients :
- 4 c cubed cooked chicken breast meat
- 1 1/2 c diced celery
- 1 tbsp finely chopped tarragon
- 2/3 c sour cream
- 1/2 c mayonnaise
- 1 tbsp dried tarragon
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 8 Boston lettuce (or other tender lettuce) leaves
Method :
- In a large bowl, combine the chicken, celery and fresh tarragon.
- In a separate bowl, whisk together the sour cream, mayonnaise, dried tarragon and salt and pepper. Pour the dressing over the chicken mixture and toss to coat evenly.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavour to develop. Serve each portion on a bed of 2 large lettuce leaves.
- 434 calories/serving, GL=0, Glycals=2. Add a glass of white wine, calories increase to 533 but GL and Glycals stay the same.
