Ingredients :
- 1/2 pound bacon, cooked & chopped
- 3 cups AP flour
- 1 tsp salt
- 2 eggs
- 1/2 cup unsweetened apple sauce
- 1 Tbs baking powder
- 1 1/2 cups milk (almond or cashew works well too)
- 2 Tbs vanilla
- 2 Tbs cinnamon
- 2 medium apples, peeled, cored, and diced
- 1/2 cup real maple syrup
Method :
- Heat skillet on medium heat (or electric griddle on 300°F)
- In large bowl, combine all dry ingredients and mix well.
- Add eggs, apple sauce, milk and syrup, stir approx 20 times. Do not over mix. There should be lumps.
- Fold in apples and bacon.
- Serve with more syrup, or apple butter and cook up the remaining 1/2 pound of bacon for a side.
