Ingredients :
- 1 lb pork sausage
- 4 large Red Potatoes
- 1 large onion
- salt
- chili powder
- cumin
- ground black pepper
- 1 can green enchilada sauce
- 1 packages corn tortillas
- 3 clove garlic
- 1 shredded Mexican cheese
Method :
- Dice the potatoes and onions
- Now cook off the pork sausage in a pan, toss in minced garlic, hit it with all the spices.
- Now let"s cook the potatoes and onion in a little canola oil. Again were gonna hit the vegetables with our spices.
- In a bowl mix together the sausage,potatoes, onions and cheese.
- Coat the bottom of the baking dish with enchilada sauce.
- Use the filling to roll up enchiladas and line the dish. Top with cheese then cover in enchilada sauce. Bake off at 350 for 25-30 minutes.
