Ingredients :
- 1 Spaghetti Squash or Noodle Squash
- 2 tbsp Mushroom chopped
- 1 tsp Shallot chopped
- 1 tbsp Sweet pepper chopped
- 3 tbsp Squash pulp
- 1/4 cup boiling water for the veg
- 1/4 cup Mixed frozen veg boiled for 5 mins
- 1/4 tsp Veg stock cube
- to taste Salt & Pepper
- Fresh Rosemary sprigs chopped small
Method :
- Cut the squash in half scoop out the pips and soft pulp then scrape out the spaghetti like squash and add to a mixing bowl.
- Add the veg to the water and veg cube and boil for 5 minutes then strain off excess and add to the squash in the mixing bowl and add to the bowl.
- Add all the other veg to the mix and mix it all in
- Add salt & pepper and rosemary sprigs and mix
- Add spoonfuls of the mix equally to the qquash boats and put them on a tray in a preheated oven 175°C/gas 7 for 20 minutes
- Serve hot
