Recipe Cheese and sausage stuffed peppers

Ingredients :

  • 1 large bell pepper per person
  • 1 cumberland sausage per person
  • 1 pinch oregano per person
  • half a spring onion per person
  • olive oil
  • pinch fennel seeds per person
  • 4 tsp parmesan cheese per person
  • 2 tbsp grated mozarella cheese per person
  • to taste salt and pepper

Method :
  1. Cut a little off the base of the pepper so it stands upright
  2. Slice the top off the pepper including the stem. Discard the stem, seeds and white parts, and dice the rest of the top of the pepper
  3. Heat a little olive oil in a pot or pan. Slice and add the spring onions, and the diced pepper. Sautee, stirring ocasionally until soft.
  4. Cut open the sausage(s) and peel off the coating. Add to the spring onions and peppers, breaking it down with the wooden spoon
  5. When the sausage browns, add the oregano, fennel seeds, salt and pepper.
  6. After 1 or 2 minutes, stir in the parmesan
  7. Pack the mix into the pepper. Put on a greaseproof or foil covered tray. Grill for up to 10 minutes.
  8. Add the mozarella to the top of the pepper, and grill for a further 5 mins, or until the cheese is browned
  9. Serve hot, with a side of rice
