Ingredients :
- 3 tbsp freshly chopped dill
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 680 g skinless salmon, cubed
- 2 lemons
Method :
- Mix the dill, olive oil, lemon juice, salt and pepper together in a bowl
- Dip each cube of salmon in the marinade, coating each side. Let the salmon stand at room temp for 15 minutes
- Meanwhile preheat the grill to a medium heat and soak 4 wooden skewers in water for 10 minutes
- Cut the lemons each into 8 wedges and thread a wedge onto each skewer, followed by an equal number of salmon cubes then another lemon wedge
- Grill for 10 minutes, turning frequently
- Serve with a garden salad
