Ingredients :
- 2 lb boneless pork loin
- 1 liter Mountain Dew
- 1 large yellow onion; julienne
- 4 clove garlic; rough chop
- 1 lemon; cut into eighths
- 1 sprig thyme
- 1 sprig rosemary
- 1/2 cup sugar
- 1 bay leaf
- 2 T cornstarch
- 1/2 C cold water
- 1 large pinch kosher salt and black pepper
Method :
- Combine all ingredients in a casserole dish. Cover. Bake at 300° for approximately 1 hour or until pork reaches desired doneness.
- Strain braising liquid. Do not discard. Whisk cornstarch and cold water. Pour cornstarch slurry into braising liquid while whisking to avoid clumps. Bring to a boil to activate cornstarch. Adjust seasoning with salt, pepper, and sugar to taste.
