
Ingredients :
- 2 eggs hard boiled and peeled
- 1/2 avocado
- 1/8 cup finely diced celery
- 1/8 cup finely diced onion
- 2 tbsp plain greek yogurt (or use light mayo)
- 1 tbsp fresh lime juice
- 1/2 tsp ground cumin
- 1/2 tsp cayenne pepper (ground)
- 1 salt and pepper to taste
Method :
- Chop eggs and add to a bowl. Chop Avocado half and add to eggs. Add celery and onion. Mix all remaining ingredients and pour over and mix well. Voila!! It"s so easy, super yummy and a great source of protein and healthy fats!!!!
