
Ingredients :
- 1 can kidney beans, rinsed and drained
- 1 can chickpeas, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 2 garlic cloves, minced
- 2 cans (14.5 oz) diced tomatoes with juice
- 2 tsp ground cumin
- 1 tbs lime juice
- 2 tbs chili powder
- 1 tsp lime zest
- 3 tbs fresh parsley (1 tbs dried parsley)
- 3 tbs fresh cilantro (1 tbs dried cilantro)
- 4 oz light beer (optional)-this one was my idea
- 1 small avocado, chopped
- 1/4 cup part skim mozzarella cheese-optional
- 1 tsp fresh grated ginger
Method :
- Combine all ingredients in a crockpot. Mix well.
- Cook on high for 1 hour. Reduce heat
- Serve on top of your favorite rice, top with a few pieces of avocado and 1-2 tbs of cheese if desired. (You can also choose to cook this in a regular pot on the stove top)
