Ingredients :
- 1/3 c apple cider vinegar
- 2/3 c extra-virgin olive oil
- 1 tsp Dijon mustard
- 1 garlic clove or 1 small shallot
- 1/2 tsp salt and a bit of pepper
Method :
- Combine all ingredients in blender. Taste and season as needed. You can add 1 tbsp of fresh lemon juice if the dressing is not zippy enough or add more oil if it is too tangy. Store in the fridge in a glass jar, tightly covered (Do not store in plastic!) but bring to room temperature and shake well before using. 158 calories/serving; GL=0, Glycals=0
