Ingredients :
- 3 lb fingerling potatoes
- 1 T fresh rosemary; minced
- 1 t fresh thyme; minced
- 2 t garlic powder
- 2 t onion powder
- as needed olive oil;
- as needed kosher salt & black pepper;
Method :
- Toss potatoes with enough oil to coat.
- Lay potatoes flat on a baking tray lined with parchment paper.
- Season.
- Bake at 375° for approximately 30 minutes or until potatoes are easily pierced with a paring knife. Shake the tray to roll the potatoes once or twice during cooking.
