Ingredients :
- Meat
- 1 lb Ground Beef
- 1 lb Ground Pork
- 1 lb Ground Veal
- Vegetables
- 1/4 large White Onion
- 2 tbsp Fresh Oregano
- Additional Ingredients
- 2 Eggs
- 1/2 cup Bread Crumbs
- 1/2 cup Fresh Parmesan Cheese
- 3 tsp Salt
- 1 tsp Pepper
- Prep
- 1/2 cup Extra Virgin Olive Oil
Method :
- Preheat oven to 500°.
- Chop Onion and oregano. (very fine)
- Scramble eggs.
- Add onion, bread crumbs, cheese, oregano, salt and pepper. Mix well.
- Add meat, one at a time. Break into crumbly chunks.
- With both hands grab mixture at the bottom and begin mixing with the meat.
- Mix until blended, but not mushy.
- Coat a large baking pan in olive oil.
- Grab meat mixture and make a ball the size of a small apple. Roll in hands until round and firm.
- Roll each ball in olive oil in the pan until the pan is filed with meatballs. (leave 1" between each)
- Brown balls for 10 - 15 minutes, take out and turn over. Brown another 10 - 15 minutes.
- IMPORTANT: If only making meatballs stop now.
- Add meatballs to sauce, pick up with a paper towl to soak up all the grease.
- Stir sauce and bring it to a boil. Immediately turn down a low-medium simmer.
- Add butter to sauce and stir in.
- Cook for a minimum of 2 more hours. Stir occasionally and draining the water in the sink.
