Ingredients :
- 1 Salmon filets
- 3 tbsp butter
- 1 tbsp olive oil
- 1 tsp flour
- 2 lemons
- 1/2 cup chicken stock
- 1 tbsp capers
- 1 salt and pepper to taste
Method :
- Melt 1 TBL of butter and oil in pan.
- Salt and pepper the salmon. Add to pan and cook on both sides until slightly pink on the inside. Remove from pan.
- Cook flour in leftover drippings. Add stock, juice from lemons, capers. Cook until slightly thickened.
- Remove from heat. Whisk in 2 TBL of butter.
- Pour sauce over salmon. Serve over rice.
