Ingredients :
- 2 Chicken Breasts
- 200 g Baby Leaf Spinach
- 100 g Ricotta Cheese
- 50 g Cheddar Cheese (Grated)
- 50 g Red Leicester (Grated)
- 1 tsp Paprika
- 1 tbsp Oil
- Pinch Salt
- 1 tsp Garlic
Method :
- Pre-heat oven to 200 degrees/gas mark 6.
- Heat the oil in a frying pan and add the garlic, fry for 30s. Continually add the spinach until it is all wilted and then stir in the ricotta - cook until melted and creamy.
- Cut slits approximately 70% through the chicken breasts every 2.5cm
- Sprinkle some salt over the chicken breasts and then fill each of the slits with the spinach mixture until it is used up. Cover the chicken with the grated cheese and dust each with paprika for colour and flavouring.
- Bake in the pre-heated oven for 20-25 minutes until fully cooked but not dry.
