Ingredients :
- 2 russet potatoes
- several stalks of celery
- 2 carrots
- 2 chicken breasts
- 2 cloves garlic
- 1 white onion (or yellow onion)
- 2 cubes chicken bullion
- 1 tsp salt
- 1/2 tsp pepper
Method :
- Wash the potatoes, but do not skin them.
- Cut the potatoes into pieces whose longest dimension is 3/4"
- Boil the potatoes for 3 minutes, then drain the water. This serves to clean them of any unwanted stuff.
- Refill the stockpot with 3 quarts of water. Bring it to a boil and cook the potatoes. Add salt and pepper.
- As the potatoes are cooking, cut up the onion, carrots, and celery, into 3/4" long pieces, and add them to the soup as they become ready.
- Add 2 cloves of minced garlic and 2 cubes of chicken bullion.
- Boil until a knife easily passes through the potatoes and carrots.
