Ingredients :
- 1 lb cooked chicken
- 2 Tbsp TBLS butter
- 2 Tbsp extra virgin olive oil
- 1 onion chopped
- 1 green pepper finely chopped
- 1/4 red pepper finely chopped
- 3 cloves garlic minced coarse
- to taste course salt
- to taste pepper
- 1/2 tsp chili powder
- 1/2 tsp oregano
- 1/2 tsp cumin
- 4 oz green chilis
- 1-2 tsp chopped jalapeneos (from a can) if desired
- 1 can cannellini beans
- 1 cup chicken broth
- 1 cup corn
- 8 oz cream cheese
- Cilantro
Method :
- Cook chicken and cut up.
- Over medium heat: heat oil and butter. Add onion, green and red pepper, garlic. Saute till tender. 5-6 min.
- Add salt, pepper, chili powder, oregano, cumin and chilies. Cook 3 min.
- Add beans, with their juice, broth, corn and chicken. Simmer 25-30 min. Reduce heat to low.
- Serve with tortilla chips, cilantro. Other suggestions, sour cream, guac, cheddar cheese.
