
Ingredients :
- 3 large sweet potatoes
- 2/3 cup Italian Dressing
- 6 tbsp Mayonnaise
- 6 celery stalks
- 1 cup chopped walnuts
- 1/2 cup red onion
Method :
- Pre-heat oven to 400° F
- Peel and cut sweet potatoes into cubes. Toss the cubes stem 6 tbps of Italian dressing.
- Place sweet potato cubes on foil lined shallow pan. Cook until tender.
- While potatoes are baking chop the celery and red onion. Place in bowl with walnuts
- In small container mix mayonnaise with 2/3 cup of italian dressing
- Add roasted potatoes to bowl along with the mayo/dressing blend. Mix well with spoon
- Let it chill for a few hours before serving. The vinegar in the dressing will mildly pickle the onion. If served before you"ll only taste the onion.
