
Ingredients :
- 10 oz spaghetti or fettuccine, whole grain
- 1 clove garlic
- 1 avocado
- 1 cup fresh spinach
- 1/2 cup tomatoes
- 1/2 cup mushroom
- 1/2 cup pecans
- 1/2 cup basil
- 1 tbs fresh lemon juice
- 3/4-1 cup pasta water
- to taste Salt and pepper
Method :
- Cook pasta according to instructions on package
- While pasta is cooking, add the rest of the ingredients to your blender and blend until it becomes a smooth sauce. Start with 3/4 cup of pasta water and add water and more as needed to get the consistency you want.
- Toss the pasta with the sauce in a bowl and serve immediately. Best served the day it"s made.
