Ingredients :
- 2 c fresh baby spinach leaves, washed
- 2 slices bacon, cook crisp and crumbled
- 2 tbsp crumbled bleu cheese
- 1/4 red onion, thinly sliced
- 3 tbsp Basic Salad Dressing (yield 1 cup):
- 1/3 c Apple cider vinegar
- 2/3 c extra-virgin olive oil
- 1 tsp Dijon mustard
- 1 garlic clove or 1 small shallot
- 1/2 tsp salt and a bit of pepper
- 1 tbsp lemon juice (optional)
Method :
- Place the spinach in a salad bowl and add the bacon, bleu cheese and red onion. Toss well, add the salad dressing and toss again. Serve immediately. 359 calories/serving; GL=1, Glycals=3
