Ingredients :
- 1/2 kg green beans
- 1 large red pepper
- 4 tbsp olive oil
- 50 g serrano ham or bacon
- 1 clove garlic
- salt
- fresh parsley
Method :
- Wash the beans and top and tail them removing any stringy bits and boil for about 8 mins.
- Prepare the pepper by sprinkling with oil and baking for about 30 mins in a preheated oven (180°C/350°F) then remove from the oven, allow to cool, remove the skin and and seeds inside, cut into strips and set aside.
- Heat the oil in a frying pan and sauté the ham or bacon (cut into cubes) with the sliced garlic.
- Add the beans, red pepper, chopped fresh parsley and salt and continue frying for a few more mins before serving.
