Ingredients :
- I. Chicken:
- 2 pounds chicken thighs
- II. Batter:
- 1/4 cup vegetable oil
- 1/4 cup baking powder
- 1/4 cup arrowroot powder
- 1/2 stick butter softened
- 7 ounces coconut flakes, sweetened
- 1/2 teaspoon salt
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon granulated garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon fresh ground black pepper
- III. Sauce:
- 1-1/2 cup mayonnaise
- 1/4 cup honey
- 2 tablespoon parsley
Method :
- Preheat oven 350° Fahrenheit
- Beat the chicken till even thickness. I took a hammer beat them in a slightly opened zip lock bag,
- In a bowl add baking, and arrowroot powders. Add spices.
- Mix everything well
- Add coconut flakes
- Mix in the flakes into the powdered spiced mixture break up the coconut lumps
- Add 4 eggs, butter, and oil. Mix very well.
- Coat chicken with batter place on a large pan and bake till done
- Mix the mayonnaise, honey, and parsley this is your sauce.
