Recipe Butterless sponge

Ingredients :

  • 3 large eggs
  • 240 g sugar
  • 140 g plain flour
  • 1 teaspoon baking powder

Method :
  1. Separate egg yolks, keep egg whites for later. Add sugar to egg yolk and beat for 2 minutes. Add 75ml warm water to yolks and sugar and continue to beat until light and creamy.
  2. Beat egg whites until stiff peaks form
  3. Carefully fold flour and baking powder into egg/sugar mix. Then carefully fold in egg whites. Be careful not to beat out the air.
  4. Place into cake tin and bake for 15-20 minutes. Once out the oven let cool for a few minutes then remove from tin and place on wire rack to cool completely
