Ingredients :
- 3 cups raw corn (about 3 cobs)
- 1 diced red bell pepper
- 1/2 small red onion (diced)
- 1 cup quartered cherry tomatoes
- 1.5 cups chopped avocado
- 1/3 cup chopped coriander (or parsley)
- 1/4 cup freshly squeezed lime juice
Method :
- Slice the corn kernels off the cob and separate them in a large bowl.
- Add in the pepper, onion, tomatoes, avocado, coriander and lime juice.
- Season with salt and pepper to taste, then gently toss until everything is mixed together.
