Ingredients :
- 4 Chicken Breasts
- Tortilla Shells
- Green and Red Peppers
- Cheddar Cheese
- 2 Tbs Lime Juice (Marinade)
- 2 Tbs Olive Oil
- 1 Tbs Cilantro
- 1 Tbs Garlic Powder
- 1/2 Tbs Onion Powder
- 1/2 Tbs Salt
- 1/2 Tbs Crushed Red Pepper
- Optional: A couple splashes of tequila
Method :
- Cut chicken into small chunks and place in small mixing bowl.
- Mix together lime juice, olive oil, cilantro, garlic powder, onion powder, salt, and crushed red pepper (tequila can be mixed in here too if using it) in a bowl and drizzle over chicken.
- Mix chicken and marinade thoroughly and cover with tin foil and refrigerate until ready to cook (if cooking within an hour, leave it out)
- Cut peppers into bite size strips. For flavor splash lime juice and place some salt on strips and mix with hands. Refridgerate untill ready to cook.
- When chicken has marinaded heat some olive oil in a pan, when warm add chicken and cook until chicken is seared a bit. After place chicken in tin foil, stacked, and set aside while cooking peppers.
- In same pan, place peppers and mix with a metal spoon to get burnt pieces mixed in. Cook until peppers are tendercrisp.
- Serve in tortillas with cheese and any extra sauce or filling of your choice.
